Something that I love but am completely clueless about is avocado. I know what you're thinking; it doesn't make sense to be clueless about avocado but it's taken me a while to properly get my head around it. "How can I cut it without smushing it?", "Will it go with this?", "How else can I use avocado?" are just some of the avocado related questions I've found myself wondering whilst using this gorgeous little green thing in recipes. It can be hard to know just exactly what to do with avocados especially if, like me, you have only just introduced them to your household. And if you haven't started adding avocado to your weekly food shop, well, why not?! It's a great food for weight loss and also has a huge amount of vitamins and nutrients packed into it. As usual Pinterest has got our back and here are some of my favourite, unique avocado recipes that I've found.

Burritos are a great meal choice for either lunch or dinner and are super quick to make which is always a plus! I'm yet to try chicken and avocado in anything yet (not even a salad!) and these look like a great dish to whip up for a healthy, quick dinner.

A gorgeously guilt free cookie recipe using avocado. Sounds impossible but The Smoothie Lover has cleverly substituted butter with avocado for when you want to crumble to temptation without worrying about the calories.

I absolutely love pasta, it's definitely one of my all time my favourite things so finding a pasta recipe that includes avocado is a must for me. Macaroni and cheese is a great comfort food and this recipe introduces avocado into the traditional recipe perfectly; still a great tasting, no fuss food!

I do love a good egg roll while dining out, and this great recipe teaches you how to replicate ones from the US restaurant The Cheesecake Factory. I've never been to the USA let alone the restaurant, but I've heard of it many a time in episodes of The Big Bang Theory; do the staff really wear those cute little yellow jumpers? Cheesecake Factory fan or not, this looks like an amazing, unique recipe which I will definitely be trying one day!

Last but by no means least is obviously a salad. I love avocado in salad, it gives just a little bit more to a typical salad and adds a hint more green which is always a good thing. Cucumber and avocado are a match made in heaven in my opinion and I'd absolutely love to try a dash of feta with them next time I mix that up. I think it's super easy to get bored of salads so I'm always on the look out for a recipe for one with a little bit of a difference.

All of these recipes have got me inspired to be more creative with avocados in my kitchen, I hope they do for you too!
